Cheddar Bay Biscuits

 So now they have an actual mix they sell at the grocery store, but if you happen to have these ingredients, you can make them from "scratch."  I always have Bisquick because I love to make pancakes or waffles.  Aaron and I always have shredded cheddar cheese on hand because we love using it as a garnishment or topping for soups or chili, and we love to cook with it (notice almost all our recipes involve cheese).  So I never worry about buying the mix they sell in the grocery store because I typically have all these ingredients on hand.  They taste like the real thing and we are in love with these biscuits!

Ingredients:
2 1/2 cups Bisquick baking mix
1/2 stick (4 tablespoons) cold butter
1 heaping cup grated cheddar cheese
3/4 cup cold whole milk
1/4 teaspoon garlic powder
 
Topping Ingredients:
2 tablespoons butter, melted
1/2 teaspoon garlic powder
1/4 teaspoon dried parsley flakes
pinch of salt
 
 
Directions:
1. Preheat oven to 400 degrees
2. Combine Bisquick with cold butter in a medium bowl using a pastry cutter or large fork.  You don't want to mix too thoroughly.  There should be small chuncks of butter in there that are about the size of peas.  Add cheddar cheese, milk and 1/4 teaspoon of garlic powder.  Mix by hand (or I used a spatula) until combined, but don't over mix.
3. Drop approximately 1/4 cup portions of the dough onto an ungreased cookie sheet using an ice cream scoop.  Bake for 15-17 minutes or until the tops of the biscuits begin to turn light brown.
4. When you take the biscuits out of the oven, melt 2 tablespoons of butter in a small bowl in the microwave.  Stir in 1/2 teaspoon garlic powder, pinch of salt, and the dried parsley flakes.  Use a brush to spread this garlic butter over the tops of all the biscuits.
