Gnocchi with Spinach and White Beans
A couple of months ago, Aaron and I began to experiment with vegetarian type foods. We can't go all out vegan because of our immense love of cheese, but this recipe had a few ingredients I have never cooked with, but absolutely LOVE like gnocchi.
This is also a "one pot" and "prep ahead" meal which I love because I hate cleaning a thousand dishes! During naptime, I typically will cut up the onions and garlic and everything else is out of a can or bag, so all you have to do during dinner is stir and add which is perfect for mothers with only one hand to use!
Gnocchi with Spinach and White Beans

Ingredients:
1 tablespoon of extra virgin olive oil
1 16oz package of gnocchi
1 medium yellow onion thinly sliced
4 cloves of garlic minced
1/2 cup of water
6 cups of chopped spinach (I put the spinach in whole as it cooks down so much)
1 15oz can of diced tomatoes with Italian seasonings
1 15oz can of white beans, rinsed
1/4 teaspoon ground pepper
1/2 cup shredded mozzarella cheese
1/4 cup finely shredded parmesan cheese
Instructions:
1. Heat 1 tablespoon oil in large skillet over medium heat. Add gnocchi and cook, stirring often, until plumped and starting to brown 5-7 minutes. Transfer to a bowl.
2. Add the remaining 1 teaspoon oil and onion to the pan and cook, stirring, over medium heat, for 2 minutes. Stir in garlic and water. Cover and cook until the onion is soft 4-6 minutes.
3. Add spinach and cook, stirring, until starting to wilt, 1-2 minutes.
4. Stir in the tomatoes, beans, and pepper and bring to a simmer.
5. Stir in the gnocchi and sprinkle with mozzarella and parmesan. Cover and cook until the cheese is melted and the sauce is bubbling, about 3 minutes.
